Add support to GPIO matrix driver for matrix polling, rather than interrupt-based IO.

- Add ZMK_KSCAN_MATRIX_POLLING config flag to Kconfig
- Update matrix driver code to use the above flag to conditionally add the handling code for polling operations.

* Add back in profiles, not using Zephyr
BT identity infrastructure.
* Restore additional `&bt` commands for profile
operations.
* Fix for split pairing and subscriptions, since
Zephyr persists subscriptions across connects.
* Remove keymap from peripheral builds, reduces
firmware size, and avoids unneeded attempts
to send HID data.
